If I normally heat my oil to 350 in an electric skillet, what heat would I set it on the stove top? Medium?

Or Medium High? I'm cooking chicken fried steak. Normally I cook it in an electric skillet but now I'm cooking it on the stove top in a cast iron skillet.

Probably med-high to get it going, drop to med. once the steaks are in, then up to 375ยบ again as you're close to being done, so they brown nicely.
Reply:Probably Medium High. If you get too much action, just turn it down a notch and wait a minute or two.





My point would be that all stove tops are different. Mine are wacky..I can't guess what they will do.





The only way to tell for sure is to use a thermometer.
Reply:the best is to get a deep frying thermometer. they are not that expensive and you can use it for other things. Like the other person said, 375 but do not turn it down when the food is in because it will cool down anyway. If you use too cool fat, your food will be greasy so temp is important.
