I've read and heard that it's dangerous to cook with olive oil on medium-high heat. Is this true?
I've read also that it releases toxic radicals, which is why it's smells funky when it's heated in a pan like that.
I'm planning to make a hummus later, which requires me to heat up olive oil.
Is this stuff true about olive oil, though? Please help. Thanks!

No it is not true. There is a danger of fire when cooking with any oil on the stove or oven. This is a fire hazard and is reduced by paying attention while cooking and can be further reduced by having a home fire extinguisher in the kitchen. The olive oil will not release toxins when placed over medium or higher heat levels. If this were true the FDA would ban the product from the market.

Reply:It's not that it's dangerous, but it might burn. Olive oil doesn't withstand high heat like veg. oil does.

Reply:No heating olive oil is not dangerous. It is only dangerous if you heat it to a broil, and it steams up and boils over the pan. It is safe to heat as long as you don't get it too hot. Medium high heat is ok, but if the oil broils over turn the heat down. If it hits the burner when it broils over it can catch fire. If this happens put a cover over the pan or pot, and put it out with a properer fire extinguisher.
Reply:I've read that when you overheat EVOO, it reduces the antioxidants, which will reduce its health benefits, and also can impact the flavor. I've never heard of it being dangerous. Here's a good article in the San Diego Union Trib.
